Regular chocolate chip cookies are enough to make my mouth water.  Chocolate-chip-raisin-oatmeal-cookies?  Holy sister, pass me a spoon.

I’d never eaten cookies in a dish until I went out for dessert one late night in Laguna Beach with my girlfriends Carrie, Kelly, and Julie.  I don’t even remember where we ate, but I do know I ate snarfed a cookie the size of a pan, warm and straight out of the oven, a scoop of melting ice cream on top.

It might have been one of the greatest nights of my life.

I decided to try cookies + ice cream in a dish for myself, with excellent results.  By which I mean I might have eaten seven.

Stop judging me.

Here’s how it all goes down: make your favorite cookies whatever they are, and pop them into a baking dish.  Bake them like you normally would, and when you pull them out of the oven, put a scoop or two of ice cream on top.

I personally love the Mrs Fields Cookies chocolate chip cookie recipe, and all I needed to add was a handful of raisins.  If you don’t like the raisins or the oatmeal, just omit them and put whatever you like into the mix.  These pounds are going on your hips, not mine, so make whatever you want.

Don’t blame me when you lick the spoon.

Cookies + Ice Cream in a Dish

  • 2 c. butter
  • 2 c. sugar
  • 2 c. brown sugar
  • 4 eggs
  • 2 tsp. vanilla
  • 4 c. flour
  • 5 c. oatmeal, ground in blender
  • 2 tsp. baking powder
  • 2 tsp. soda
  • 24 oz. chocolate chips
  • 4 oz. grated Hershey bar
Cream butter and sugars together. Add eggs and vanilla. Mix in flour, oatmeal, baking powder and soda. Stir in chips and Hershey bar. Bake 7-10 minutes at 375 degrees.

      Most people don’t like raisins, I think. Take them out, and you’ve got yourself a fancy fancy dessert.
