My favorite 8 year-old came home from school today and stated:

“Mom, we need something “banana-ish” today.”

Consider it done, lovely girl.


Banana Muffins

{Recipe from Set for Life}

1 cup whole wheat flour

¼ teaspoon salt

1 cup bran cereal (All-Bran, Fiber One, etc.)

1 tablespoon baking powder

2 tablespoons sugar or honey

1 egg

2 tablespoons oil

1/3 cup skim milk

2 large or 3 medium bananas

Preheat oven to 400 degrees.


Mix all ingredients until combined. Spray muffin tins with nonstick spray. Fill muffins 2/3 cup full. Cook 12-14 minutes for regular sized muffins or 9 minutes for mini-muffins.

Yield: 16 regular muffins or 30 mini muffins.


Let’s MC Hammer this and “break it down”:


First of all, grind the wheat. We go through whole wheat flour like water over here, so the kids are used to the scream of the “Whisper Mill” (ha!).


Baking is a constant in this household in order to cut down on commercially manufactured snacks for the kids. This way, I know the ingredients, I can actually pronounce them, and I know what it going in my kid’s bodies. What?!? Me? Control freak? Guilty.


I’m a dumper. I just don’t have time (the patience,really) to cream the wet ingredients, mix the dry, etc. Dump it all in and mix it up. Works like a charm!


YUM!


It is crazy how sweet these are with such little sugar/honey added. Plus, the added fiber makes it very filling!
