While you’re waiting for me to put up today’s giveaways, have a little something to eat. Please. Here’s my go-to recipe for rice pudding: a quick, yummy meal during the holidays. Honestly my kids would be thrilled to eat this every night but vegetables have to sneak in there somewhere and ruin all the fun.
{serves 4}
3/4 c. uncooked rice
{I’ve been using brown rice this year, it’s better for you and the kids don’t even notice}
2 c. milk {divided}
1/3 c. white sugar
1/4 tsp. salt
1 egg, beaten
2/3 c. raisins
{craisins are fun too}
1 T. butter
1/2 tsp. vanilla
2 tsp. cinnamon
Bring 1 1/2 H20 to a boil. Add rice and stir. Reduce heat, cover and simmer 20 min.
In another combine 1 1/2 cooked rice, 1 1/2 c. milk, sugar and salt. Cook over medium heat until thick and creamy {15-20 min}. Stir in remaining 1/2 c. milk, beaten egg, and raisins.
Cook 2 min. more, stirring constantly. Remove from heat, stir in butter and vanilla.
Serve and enjoy!
