I’m sure that since my post about meal planning and the accompanying meal planners post, you’ve all been burning to know how I’m doing at it and what we’ve been eating!

Well, to tell the truth, I haven’t been 100 percent. Apparently it takes a lot of time to plan meals and then go grocery shopping! And we’ve been a little bit extra busy lately. But we have had some great meals and I’d like to share with you what cookbooks I’ve been using, because they’ve been life savers!

First, I’ve been using Cooking Light, Fresh Food Fast. As the cover boasts, this book includes over 280 incredibly flavorful recipes. Most recipes take me under 30 minutes and all of them have been absolutely delicious! I have just about every second page dog-eared to indicate that I need to try out the recipe. I am a visual recipe searcher and the photos of the food in this book don’t disappoint. This is definitely a winner if you’re looking for good, healthy food made fast!

The other book I’ve been using was a wedding gift from Nicole Hill Gerulat and is called The Quick Recipe. It’s by the editors of Cook’s Illustrated magazine. Although this one has no pictures (except for a section in the middle) you can bet that every recipe is going to turn out wonderful and be fast. What I love about this book is that it has a long explanation before most recipes about the development of the recipe or about techniques that you should use. So this book is also very educational. For example, I learned what the best potatoes are for roasting, for hash browns, for mashing, etc. They’ve done all the work testing, and you get to reap the benefits!

And just so that you get a flavor of what’s going on in our home and don’t think that we’re being completely healthy, here are a two recipes that I’ve done this weekend:

    The quick recipe cookbook sounds kind of rad. I will be checking to see if our local library has that bad boy.
