
This year marked my fifth for freezer jam, my third for canning peaches and applesauce, and my first for canning tomatoes. Now that it’s all done; the tomatoes weren’t nearly as tricky as I’d expected and were actually easier than the peaches. No worries about them turning brown like peaches, no extra step of pureeing like applesauce. And they look so pretty and autumnal on my pantry shelf.

Hil–it I can do it, you can do it. A few hours of effort I think will really pay off with all the soups, stews and pasta dishes we enjoy in the fall and winter. Plus, I know exactly what went into each jar and that home-canned won't taste like, well, a can.
Way to go. We are doing applesauce next week. I wish we had enough tomatoes for bottling. Unfortunately high desert summer hates tomatoess.
i just found your blog through kelly's and i have to tell you i have just spent the last 10 minutes wandering though it an di love it! i love canned tomatoes but this year i was lazy and just roasted a bunch then threw them in the food processor. i added some to chili the other day and they ended up quite tasty. i will definatly add your lovely blog to my list of must reads!

Tomatoes?! I am so impressed. I am lucky if I get freezer jam done in a year. I need to be more proactive when it comes to canning… thanks for the inspiration!
I can tomatoes and I love it. They are perfect to make marinara, taco soup and a million other things. I probably use my tomatoes more than any other canned item. Love it! Yours look beautiful!
Do you use a pressure canner or just a boiling water bath? My mother-in- law uses a boiling water bath but I've heard that is risky with tomatoes b/c of the acid. Do you have any answers? Thanks in advance!
boiling water bath, we had zero problems. my mother always did it bwb, as does my aunt, the canning whiz extraordinaire. I've called her every step of the way with everything I've ever canned, and she hasn't led me astray yet. Just follow the directions in your canning kit, or the red & white cookbook everyone has, or contact your local extension office.
