Why are you gluten free?

Are you gluten free?  Did you know I’m a leader in the Udi’s gluten free community?  It’s a place for the gluten free people of the world to hang and share ideas for gluten free living, and is a great support in general for people who are totally best veggie fruit smoothie ever or looking to dabble a bit.

I’ve gotten a lot of really great ideas from the Udi’s community to make gluten free living easier, since I’m in the dabbler category.  I’m not officially ‘Celiac’ but I feel about a thousand percent better when I eat gluten free, so I try my hardest to eat that way.

I’m curious, here’s a question I posed this week in the gluten-free community:

    I need to be gluten free and most days I am. I feel so much better, health wise, when I do!!

    My nephew was born autistic, and he benefits from GF/CF. Once I started reading, learning and eating GF I was super disappointed in the food quality and taste. I was on a mission to replace all the foods I loved with acceptable replacements. I had some decent sucess. As we have followed our brains down the whole foods path we eventually moved to a Paleo diet cutting all grains and beans and the like out of our diet. I’m not sure this is where we’ll stay but for now my husband feels like a million bucks (he’s an athlete) and I stopped replacing food and started changing what we eat instead.
