If you’re anything like me I live for August, just so I can taste the once-a-year, out of this world flavor of corn on the cob.
There’s really nothing else like it.

My BFF Martha Stewart has a great little trick for preserving the fresh taste of corn on the cob, well into the cold fall.
I love that Martha. She’s got all the good tricks.

To prepare the corn, boil it just like you would regularly. Fill a pot with lukewarm water and add the corn; bring the water to a boil and cook for about 12 minutes. Remove corn from the pot.

Let the corn cool down, and start cutting the kernels off the cob.
Once the corn is completely sliced off the cob, put it all into a Ziploc freezer bag.
When all the corn is at the bottom of the plastic bag, squeeze all the air out of the bag and seal it.

Keep the corn in the freezer for up to 3 months, and reconstitute back to delicious, fresh corn on the cob by boiling for a few minutes.
I can’t wait to taste delicious, fresh corn in November, I really can’t.
My mom used to freeze tons of corn, peaches, and okra every single summer. Helping to prepare the bags is still one of my favorite childhood memories. I don’t, however, enjoy the memories of how many WORMS we would find lurking underneath the husks of some of that fresh corn.. yick!!!
Oh, Peaches! I wish I had enough peaches to freeze for those cold winter nights. I totally understand the worms though, I had the same thing all summer canning with my mom. Yuck is right.

I had to help my parents do this every summer growing up and it was always so great to have “fresh” corn in the winter. I think the pain of doing this has worn off now, so I should probably start doing it again. Thanks for the reminder!

My Mom does huge batches of this at the end of every summer, and then we have delicious sweet corn with Thanksgiving and Christmas dinners. Yum!
