Chocolate-Covered English Toffee

Make your own chocolate-covered home made toffee with this easy recipe and just a few baking ingredients you already have in your kitchen. It's so delicious!

Serves: 1 tray
  • ⅞ lb of butter (3 sticks, oh yes)
  • 2 cups of granulated sugar
  • 1 tablespoon light corn syrup
  • 1 teaspoon of salt
  • dash of vanilla (optional)
  • 1 cup ground baking chocolate
  1. Using a food processor (or cheese grater) grind 1 cup semi-sweet chocolate chips or baking chocolate. Set aside.
  2. Melt the first stick of butter in a pan over low/ medium heat
  3. Once the first stick is completely melted, add the remaining two sticks of butter to the pan.
  4. Now that you have a pan full of melted butter, turn up the heat and add the sugar, one cup at a time, stirring quickly as you do.
  5. Stir in the second cup of sugar, stirring continuously while doing so.
  6. Turn the heat up to medium/high to get the butter and sugar bubbling.
  7. Boil the mixture until it gets bubbly and foamy.
  8. Add corn syrup, stirring the whole time.
  9. Keep stirring as the toffee turns from yellow to a light brown.
  10. Keep boiling and stirring on low to medium heat until the toffee is caramel brown and a silky consistency.
  11. Add salt, stirring quickly, and remove pan from heat.
  12. Immediately pour toffee onto a greased or parchment paper covered cookie sheet.
  13. Spread toffee out to the edges of the cookie sheet using a wooden spoon.
  14. Sprinkle ground baking chocolate across entire sheet of toffee and allow to melt.
  15. Using a spoon, spread chocolate evenly across toffee until completely covered.
  16. As toffee cools, use wooden spoon to score it in even lines. Once it has cooled completely, break into even pieces.
