Mashed Potato Pizza

  • 7 large or 15 small potatoes, washed and quartered
  • 1200 mL or 5 cups chicken broth
  • 6 garlic cloves, peeled
  • cream
  • salt and pepper to taste
  • bacon
  • cheese
  • chives
  1. Boil potatoes and garlic in chicken broth. Add water, if necessary, to cover potatoes.
  2. Boil 20-30 minutes or until potatoes are soft.
  3. Drain.
  4. Add some cream, salt, and pepper to your desired taste and consistency.
  5. Mash or whip until creamy.
  6. Roll out pizza dough.
  7. Top with mashed potatoes, cheese, chives, and bacon.
  8. Bake until crust is golden and cheese is bubbly.
*These potatoes are enough for 2 pizzas!
