Chicken Salad Sandwich Recipe

Serves: 6 servings
  • 1 c mayo (I substitute Greek yogurt for more protein + less fat)
  • 1-2 teaspoons seasoning salt (to taste)
  • 1 tablespoon lemon juice
  • 2 green onions, diced
  • 1 cup sliced grapes (red or green)
  • ½ c sliced almonds
  • 1 cup chopped celery
  • 3-4 boneless skinless chicken breasts
  • 6 croissants for serving
  1. Season boneless skinless chicken breasts with seasoning salt.
  2. Place the seasoned chicken breasts in a crock pot, cover with 3-4 cups of water, and cook on high for 5 hours.
  3. Once the chicken is completely cooked, shred with two forks and set aside.
  4. Chop green onions, celery and almonds.
  5. Dice grapes.
  6. In a big bowl mix together mayonnaise (or Greek yogurt), lemon juice, and seasoning salt.
  7. Add chopped vegetables and grapes to the Greek yogurt (or mayonnaise) and mix thoroughly.
  8. Add shredded chicken to bowl and mix completely.
  9. Store in the refrigerator.
  10. When ready to serve, scoop chicken salad into sliced croissants.
  11. Enjoy!
