cucumber couscous salad recipe

Cucumber couscous salad is one of my favorite summer salad recipes.  It’s easy and delicious and sometimes I can get both the cucumbers and tomatoes out of my summer garden, which I don’t have to tell you, is 10 kinds of fabulous.

Ingredients for Cucumber Couscous Salad:

  • 1 cup couscous {it cooks up to make a lot of couscous}
  • 1/4 cup vinegar
  • 2 cucumbers, diced
  • 2 tomatoes, diced
  • 1/4 cup sliced red onion {I chose not to use this}
  • 1 clove of garlic, minced {mine was very garlic-y, even with one}
  • 1/4 cup olive oil
  • salt and pepper to taste
  • 1/2 cup crumbled feta cheese {I was out, so I used mozzarella instead}

Peel, wash, and dice up your cucumbers.

Then move onto your tomatoes.  Mine were juicy little buggers so it was a slippery affair.

Chop up everything else  and throw it into a bowl.

In a separate container {I just used a measuring cup since it was already dirty} mix together your oil, vinegar, salt, and garlic, and mix the liquid into your chopped up vegetables.

While you’re slicing vegetables, boil your water for couscous.  Follow the directions on the couscous package.  Mine took less than 5 minutes to cook and fluff.  Once your couscous is ready, dump it on top of the vegetables and mix it all together.

Wasn’t that easy?  Just a few steps, and dinner is made!  Easy cucumber couscous salad.  Perfect for a hot summer night.  Enjoy!

looks fab!
my hubby hates cucumbers and tomatoes, but my 1.5-year-old loves couscous (and veggies), and i confess that sometimes i just make it so i can hear him say “couscous”.

That’s really funny! About the couscous, I mean.

You could probably make it with other vegetables, like carrots and peas or something along those lines. I personally think it’s the cucumbers and tomatoes.

i’m not an avid couscous user, but this one i’ll HAVE to try…it sounds just about perfect!

Add kalamata olives, feta cheese and artichoke hearts for a lovely greek salad!

I just made this – it was so freakin good. And I’ve got more cucumbers than I know what to do with so I’ll be making this all the time. YUM.
