Autumn Time Comfort Foods

It’s all official and everything. Autumn has arrived. The air has a definite chill which tells me it’s time to change up our menu a bit.

I admit I was once a little worried that a gluten-free lifestyle meant abandoning our favorite cold weather comfort foods. Wrong! Haven’t missed out on anything, and I don’t even have to think too hard to come up with winning menu plans. The last stragglers of summer’s vegetables in my garden, and the new crops of winter squash make eating clean and gluten-free really easy, and it’s all totally tasty. For reals. As in, zero complaints from the Mister, even requests for seconds from the kids.

Thanks to our garden-gone-gangbusters, our next lineup of dinners might include a roasted butternut squash soup (my favorite), a brown rice & vegetable strata with zucchini, peppers, tomatoes and leeks, and a huge pot of three-bean chili with carrots and peppers (my family’s favorite). No special gluten-free substitutes or ingredients required, and plenty of comfort-factor on these newly crisp evenings.

Three cheers for a garden full of naturally gluten-free eats and three more cheers for comfort food. Everybody’s happy. Especially my tummy.
